What is mango sticky rice?

Thai mango sticky rice (khao neaw mamuang) at Siam Kitchen, halal dessert Singapore

"Khao neaw" means sticky rice and "mamuang" means mango. The dish is one of Thailand's most loved desserts, sold everywhere from street carts to restaurants. It combines three simple things: chewy sticky rice, creamy coconut milk and sweet, ripe mango.

How it is made

  1. The rice: glutinous rice is soaked, then steamed until soft and chewy.

  2. The coconut milk: while the rice is still warm, it is mixed with coconut milk sweetened with sugar and a pinch of salt. The rice soaks it up and turns glossy and fragrant.

  3. The mango: ripe, sweet mango is sliced and placed beside the rice.

  4. The finish: a little extra coconut cream is poured over the top.

The pinch of salt matters. It brings out the sweetness of the mango and stops the dish tasting flat.
